Fudgy Peppermint Brownies

Fudgy Peppermint Brownies

Try these Fudgy Peppermint Brownies for a minty twist on an old favourite.

Ingredients

2 tbsp
ground flax
¼ cup
warm water
2
eggs
2 x 14 oz
cans of black beans, rinsed and drained
2 tbsp
olive oil
1/2 cup
cocoa powder
⅔ cup
pure maple syrup
2 tsp
peppermint extract
1 tsp
vanilla extract
½ tsp
baking powder
1 cup
spelt or whole wheat flour
1/2 cup
dark chocolate chips

Directions

Preparation time: 15 minutes
Cooking time: 30 minutes

  • Gently rinse all produce under cool running water. 
  • Use separate equipment for handling raw food and cooked food. 
  • Do not eat raw dough or batter as it may contain bacteria that could cause you to become sick. 

Preparation:

  1. Preheat oven to 350°F (175°F).
  2. In a small bowl, mix the ground flax with water and let it sit for a few minutes to set.
  3. In a food processor, add the black beans, oil, maple syrup, peppermint and vanilla extract,
    flax, eggs, and cocoa and purée until smooth. Add whole wheat flour with baking powder
    and pulse just until combined. Mix in ½ cup chocolate chips by hand.
  4. Line a 9 x 9-inch square baking pan or round pie dish with parchment for easy removal and
    cleaning. (Note that getting the wax paper wet makes it easier to form in the pan.) Spread
    batter into the pan and smooth the top out with a spatula.
  5. Bake for 28-33 minutes until dry on top and the toothpick comes out mostly clean. Cool in
    pan for 15 minutes.
  6. Add the remaining ½ cup chocolate chips and coconut oil to the bowl. Warm gently in the
    microwave for 30 seconds at a time or over a double boiler, stirring, until melted.
  7. Pour the melted chocolate over the top of the brownies and spread evenly with a spatula.
    Sprinkle with crushed candy cane. Let set until the topping has set.
  8. Cut into 16 pieces, and serve.
