Try this for a different kind of chicken sandwich.
Chipotle Mayo:
- 1 cup mayonnaise
- 2 Tbsp finely chopped cilantro
- 1 garlic clove, finely minced
- 2 tsp fresh lime juice
- ¼ – ½tsp chipotle chile powder or 1 canned chipotle pepper, chopped
Cilantro Slaw:
- 2 cups purchased shredded coleslaw mix
- ¼ cup chopped fresh cilantro
- 1 Tbsp canola oil
- 1 Tbsp lime juice
- ¼ tsp black pepper
Chicken Wraps:
- 2 flour tortilla wraps (20cm diameter)
- 4 Tbsp Chipotle Mayo
- 6oz boneless chicken breast, chopped
- 2 cups Cilantro Slaw
To Make Chipotle Mayo:
1. Whisk together all ingredients.
2. Chill until ready to serve.
To Make Cilantro Slaw:
1. Place coleslaw mix and cilantro in a large bowl.
2. Whisk canola oil, lime juice and pepper together and pour over coleslaw.
3. Toss to mix.
To Make Chicken Wraps:
1. Spread 2 Tbsp of Chipotle Mayo over each wrap.
2. Place ½ of diced chicken on each wrap.
3. Top with 1 cup of Cilantro Slaw on each wrap.
4. Fold up bottom edge of wrap and then roll up like a burrito.

This is a really good recipe,especially the mayo. We are putting that on all sandwiches even on pork loin.
