Chicken Salad with Cranberries and Tarragon

A sophisticated version of the classic recipe.

Ingredients

2 cups of chopped, cooked chicken meat
¼ cup dried cranberries, finely chopped
1 Tbsp shallots, minced
1 tsp lemon juice
¼ cup mayonnaise
1 tsp minced fresh tarragon
½ tsp black pepper
8 slices white bread

Directions

1. In a bowl, stir together all the ingredients except the bread until combined.

2. Make 4 sandwiches with chicken salad and bread, pressing together gently.

  1. I am going to try this but would like to add a few grapes and serve it on a lettuce leaf. No bread. What about a small amount of curry powder for added taste.
