Follow the instructions to double boil the potatoes according to this recipe.
Mash and let cool before adding the onion, chives, garlic (if you didn’t already add it), pepper and egg. Blend together and then form the potatoes into 8 pancakes.
Heat 2 tablespoons of the olive oil in a frying pan and then add 4 of the pancakes. Once they are golden and crispy on one side, flip the pancakes over. When they are done, remove them, and repeat with the 2 tablespoons of oil and the remaining 4 pancakes.

i noticed when you grate the potatoes and put it to boil; by the time the
water is boiled the potatoes are cooked so i cannot boil them again is there anything else i can do and also how long should i boil the first time
When I made this recipe at home I cut the potatoes into small pieces instead of grating them and that seemed to work well – you get the benefit of the double boiling without getting a bowlful of mush! For the first boil, just wait until the water starts to bubble and then drain the water and add fresh water for the second round of boiling (this time until the potatoes are cooked).
I will start by saying that I don’t like potatoes so I’m not impressed with this recipe. Lacks flavour. Next time I will add some fresh herbs from my garden or Mrs. Dash and some hot sauce. Any suggestions to add some zip.
Double-boiling can result in the potatoes losing some flavour, unfortunately (but necessary to lower the potassium). Your suggestion to add fresh herbs, salt-free seasoning and hot sauce are great ideas.
